when i made this the other night my husband turned to me and said, “hunny, you’ve made me a fan of squash.” enough said.
1 acorn squash
2 T. brown sugar
2 T. butter/earth balance
honey or maple syrup
chili powder or paprika
1) cut squash in half from top to bottom. scoop out the insides, like a pumpkin or butternut squash.
2) place in a square glass pan, cut side up. fill pan with water, about 1/2 to 1 inch.
3) in each squash cavity, fill with 1 T. brown sugar and 1 T. butter. drizzle with honey or maple syrup. sprinkle with as much chili powder or paprika as desired.
4) bake at 400° for about 1 hour, or until soft when poked with a fork. allow to cool for a few minutes. eat with a spoon right of the skin.
